One-Pan Baked Salmon & Veggies

Ingredients (2 servings):

  • 2 salmon fillets

  • 2 cups mixed vegetables (zucchini, broccoli, cherry tomatoes)

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

Method:

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • Place salmon and vegetables on the sheet. Drizzle with olive oil and sprinkle with seasonings.

  • Bake for 15-20 minutes, or until the salmon flakes easily with a fork.
