One-Pan Baked Salmon & Veggies
Ingredients (2 servings):
2 salmon fillets
2 cups mixed vegetables (zucchini, broccoli, cherry tomatoes)
2 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper to taste
Method:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place salmon and vegetables on the sheet. Drizzle with olive oil and sprinkle with seasonings.
Bake for 15-20 minutes, or until the salmon flakes easily with a fork.
