Cauliflower Fried Rice

Ingredients (2 servings):

  • 3 cups riced cauliflower

  • 1 cup mixed vegetables (peas, carrots, green beans)

  • 2 eggs, beaten

  • 1 tbsp soy sauce or coconut aminos

  • 1 tsp sesame oil

  • Optional: diced chicken or tofu for protein

Method:

  • Heat sesame oil in a skillet. Add vegetables and cook until tender.

  • Push vegetables to the side of the skillet, pour in beaten eggs, and scramble.

  • Add riced cauliflower and soy sauce. Stir-fry for 5 minutes until heated through.
