Cauliflower Fried Rice
Ingredients (2 servings):
3 cups riced cauliflower
1 cup mixed vegetables (peas, carrots, green beans)
2 eggs, beaten
1 tbsp soy sauce or coconut aminos
1 tsp sesame oil
Optional: diced chicken or tofu for protein
Method:
Heat sesame oil in a skillet. Add vegetables and cook until tender.
Push vegetables to the side of the skillet, pour in beaten eggs, and scramble.
Add riced cauliflower and soy sauce. Stir-fry for 5 minutes until heated through.
