Mason Jar Salad

Ingredients (1 jar):

  • 2 tbsp olive oil and balsamic vinegar (dressing)

  • ½ cup cooked quinoa or brown rice

  • ½ cup chickpeas or grilled chicken

  • 1 cup chopped vegetables (cucumber, cherry tomatoes, carrots)

  • 1 cup leafy greens (spinach, kale, or lettuce)

Method:

  1. Layer the ingredients in the jar in this order: dressing, grains, protein, vegetables, and greens.

  2. Seal the jar and refrigerate. Shake before eating.
