Mason Jar Salad
Ingredients (1 jar):
2 tbsp olive oil and balsamic vinegar (dressing)
½ cup cooked quinoa or brown rice
½ cup chickpeas or grilled chicken
1 cup chopped vegetables (cucumber, cherry tomatoes, carrots)
1 cup leafy greens (spinach, kale, or lettuce)
Method:
Layer the ingredients in the jar in this order: dressing, grains, protein, vegetables, and greens.
Seal the jar and refrigerate. Shake before eating.
