Balanced Egg Scramble

Ingredients:

  • 2 farm-raised eggs

  • 1/3 cup frozen spinach

  • 1/3 cup left over roasted sweet potatoes (or any leftover roasted veggies you have on hand)

  • 2 tbsp cheese of choice (a sharper cheese is preferred here and lower in saturated fats)

  • 1 tbsp olive oil or preferred cooking oil

  • Everything bagel seasoning to taste (optional)

  • Crunchy chili oil to taste (optional)

Method:

  • Start with sautéing your veggies with olive oil in a pan on low to medium heat

  • Add eggs, cheese, & crunchy chili oil

  • Scramble until fully cooked, constantly stirring

  • Top with everything bagel seasoning

  • Serve immediately
